1. Local ingredients

2. Designer grains
Replace traditional grains like wheat with more ancient varieties such as kamut, spelt, rye. Take advantage of the gluten free market by incorporating non-gluten "grains" like quinoa, amaranth, and buckwheat which are also great sources of protein.
3. Tea flavour infused desserts Add a taste of tea, the world's most consumed beverage second to water to desserts to tantalize the taste buds. Add a hint of jasmine to mousse for cakes, cupcakes and mini pastries.
4. Savoury chocolate
Turn chocolate a traditional sweet dessert into a food fit for every meal with the addition of salt and spices such as chili and basil.
5. Textured wedding cakes
Create breathtaking wedding cakes by adding classic lace details, as well as modern textures such as ruffles.
