To wheat or not to wheat? Ahhh... such a dilemma, now with the increased incidence of gluten related disorders and the evolution of a more health conscious consumer. There is so much controversy about the presence of wheat in the diet, it is no wonder that consuming wheat based products is such a major decision. Wheat in baked goods has many functional properties given the presence of the all important protein "gluten" and therefore substituting this multifunctional ingredient is often times, harder than one can imagine.
Therefore with the addition of gums, replacing the various roles of wheat in baked goods, many of the functional properties can be restored. Gums act as a binding agent, as well as a thickener and emulsifier in baking applications. To make gluten free baking easier, try using pre-made mixes which already contain gums and a combination of flours; preparing baked goods free of gluten is becoming much simpler!
