Creating Healthy & Tasty Baked Products

In today’s world of baking the number one criteria in creating  successful products is taste, and probably the other is healthfulness.  Finding ingredients that are able to replace traditional components in recipes can be challenging since they provide functionality as well as taste. Over the past few years many “superfoods” have emerged  into the marketplace which have proclaimed many promising health benefits, and thus undoubtedly incorporating these ingredients into recipes can yield a very favourable product.

 

Flaxseed is a perfect example of an ingredient that possess multifunctional properties.  Firstly, flaxseed can be considered a superfood given its many healthful constituents such as omega-3 fatty acids, fibre and lignans. All of these components found in flaxseed can contribute to better health by affecting cholesterol and blood sugar levels.  More importantly, the addition of flaxseed into baked products can also serve as a substitute for many key ingredients such as egg and butter given its thickener and fat containing properties respectively. 

 

With many Canadians choosing more healthful lifestyles, substituting ingredients that possess multifunctional roles will help meet the demand for healthier food products while still maintaining the number one factor in ensuring successful products- taste.  Ultimately, flaxseeds are rich source of fibre, and omega-3 fatty acids, as well as free of gluten , and including this superfood into products will enhance its nutritional profile while still preserving taste, and  creating a functional food- a food that provides 

nutrition beyond what is essential.

 

Tips:

 

To replace 1 tbsp of fat or oil in a recipe, substitute 3 tbsp of milled flaxseed.

To replace an egg in a recipe, mix 1 tbsp of milled flaxseed plus 3 tbsp of water.
