Ramekin dishes are a culinary timepiece with its versatile use and convenient element. The word ramekin originated from a French word which is reflective of the many dishes that can be made using these special bowls. These dishes are popular for its  individual portioned attribute, which are

excellent for making both sweet and savory foods.  Souffles, creme brulee, flan, custards, molten cakes are just some common desserts that are made using these dishes. Ramekins are also great for making macaroni pie, quiche, and serving dips and sauces.

Molten Chocolate Cake

Add some sweetness to your life this spring season with this quick and easy to make molten chocolate cake.

 

*Recipe adapted from Food Network*

 

Ingredients

  • 7 1/2 ounces bittersweet chocolate (coarsely chopped)
  • 11 tablespoons unsalted butter 
  • 3 large eggs
  • 3 large egg yolks
  • 1/4 cup plus 2 tablespoons white granulated sugar
  • 5 tablespoons all purpose flour

Directions

 

  1. Preheat oven to 325 degrees.
  2. Grease dishes using the butter
  3. Melt 5 1/2 ounces of the chocolate and butter. Place chocolate and butter into a metal bowl, and set it over a pan of simmering water. Stir until melted and smooth. Let it cool slightly.
  4. Combine eggs, yolks and sugar in a separate bowl. Mix using an electric mixer with the whisk attachment. Mix on medium to high speed for about 10 minutes. 
  5. Mix in flour on low speed
  6. Add melted chocolate, and continue to mix for about 5 minutes. 
  7. Divide half of the mixture among the ramekins. 
  8. Divide the remaining 2 ounces of chocolate among them. Place the chocolate in the center of the batter (about 1tbsp of chocolate per dish).
  9. Pour remaining batter among the ramekins.
  10. Bake for 12 mins until the cake is set around the edges but center is slightly jiggly when the cup is moved
  11. Let cool for about 3-4 mins
  12. Served with your favorite topping
